Busy at work, after she started her first job, author Julia Mirabella soon realized that eating lunch out every day was not an effective use of time. She imagined leaving the house for work each morning with a healthy and delicious lunch in her possession.
She then discovered the venerable Mason jar, and started spending a little time on the weekends making Mason jar meals for the coming week.
One of the outcomes of her work in the kitchen is Mason Jar Salads and More, a novel and fun cookbook that focuses upon creating easy, layered lunches, snacks, smoothies, and more, all in Mason jars. There are 50 recipes and full-color photos that will inspire those with insatiable palates to create even more recipes of their own. One of the layering techniques for a salad with chicken or other forms of protein is to put the dressing in at the bottom of the jar. When it’s time for lunch, you simply turn the jar over and the dressing flows over the rest of the ingredients.
The recipes include a mango smoothie (breakfast); asparagus risotto (lunch); and spicy hummus and veggies (afternoon snack). This is a smart little book that will help inspire you to prepare your own delicious, healthful meals to take to work or on recreational outings.
